The aim of this course is to discover the importance of a healthy and rich daily nourishment that employs cereals, pulses, vegetables, sea-weeds, vegetal proteins, herbs and spices, being in full harmony with the change of seasons.
By preparing easy, tasty and fast dishes, we learn:
- The CUTTING TECHNIQUES on vegetables, by maintaining all their organoleptic properties.
- The use of different COOKING STYLES to prepare vegetables, cereals and pulses.
- The use of vegetal SEASONINGS.
- What ORGANIC and BIODYNAMIC food means.
- The indispensable TOOLS to make your recipes great.
- The basic information to choose HOW TO BUY food products.
 

These lessons are oriented to developing the basic information learnt, in order to make creative recipes and prepare dedicated menus:

The WINTER CEREALS: how to adapt oaths, millet, buckwheat to seasonal vegetables, by creating rich and energetic recipes that may strengthen our immunity system.
SOUPS AND CREAMS from our oldest traditions. Experimenting recipes that are based on the “Bel Paese” food culture, from the North to the South.
STARTERS AND CELEBRATION DISHES: holiday and celebration occasions may be welcomed by simple and tasty dishes, still without exceeding in their energetic values.
FRITES AND TEMPURA, the frying style with an ultra light no-egg and no-milk batter, which provides the right energy and satisfies your taste.
HOW TO COOK SEITAN, TOFU AND TEMPEH: vegetal proteins are easy to prepare and simple to combine with main and side dishes. A fanciful alternative to animal proteins.
Cereal, veggie and pulse TARTS AND FLANS. A complete dish, protein-rich and nutritious.

- FOOD COUNSELLING for whoever wishes to achieve a deep knowledge of food and of the macrobiotic remedies to improve their health.
     
- PREPARATION OF TAKE AWAY DISHES for groups: seminars, conventions, onsite courses, celebrations and parties.
- COOKS upon request for permanent activities, country-houses, camping sites or villas hosting groups for short periods. We offer the following cuisine: macrobiotic, vegetarian, Mediterranean. They all meet each group's needs.
