The wisdom and depth of the Yin & Yang philosophy opens your mind to flexibility and elasticity. Each phenomenon encompasses duality in itself, but it's also true that each phenomenon is subjected to transformation and whatever contains more elements of yin nature may turn into something of yang nature, or vice versa. While cooking, this means taking the food you have at your disposal and using fire, water, time, seasonings, cutting techniques and cooking styles in order to change the quality of food, to emphasize or contrast its original nature. It is indispensable for us to discover the magic, the soul of food and its vital power because it grants us the opportunity of greater creativity in cooking and the required capacity of choosing and adapting our nourishment to the physical needs and the nutritional desires of that moment. This is the art of listening to ourselves in order to learn the secrets of cooking with fantasy and lightness.

 
     
Different species turn one into another by means of feeding. Eating means taking possess of the natural environment on its whole: absorbing light, earth, water, air. That's the reason we say “ we are what we eat” and I love to stretch the meaning of this sentence by stating that “we are what we feed our body with” because, by being human beings we do not feed with organic food only, but also with emotional, mental and spiritual vibrations. This implies that quality food largely contributes to strengthen our health; a correct control of our emotions allows us to build serene and constructive interpersonal relations; vivid and positive thinking permits to act firmly and with good will, so that what we are can be effectively shaped out. These components, by interacting with one other, allow us to grow and evolve.
     
An ideal diet does not indeed exist, because there is no existence of any ideal person, any ideal body, any ideal way to perceive things, to think or to behave, any ideal way to live or to be healthy. Ideals have no material essence, they are meant as guidelines, noble ideas that must be made true by individuals whose real lives are conditioned and depend upon many variables. There are no absolute truths, but simply different options that may be followed according to our feelings. Teaching and ideal diet or a strict cooking philosophy means giving birth to an ideology that makes us inflexible and not prepared to change. In my cooking courses I wish to convey this thoughts to my listeners and my target is not to teach what's right or wrong to eat, but to educate them to distinguish which food may be better or worse for each one of them. My purpose is to refine their sensibility with respect to quality and taste and to learn how to listen to themselves, so that their diet can come into shape as per their different needs. Health does not depend on other people, but on ourselves. It is a path that comes into shape step by step on a continuous research for balance, with kindness and simplicity.
